Since Todd has been diagnosed with Type 2 Diabetics, I have been trying a few new recipes from a diabetic cookbook. Of course, trying new recipes is always scary, especially with Tyler and Kody. I wouldn't say they are picky eaters but they certainly like their favorites. I tried this menu last night --
Parmesan Chicken Breasts
1 1/2 pounds boneless, skinless chicken breast
1 cup grated Parmesan cheese
4 tsp dried oregano
1 tsp garlic powder
1 tsp pepper
2 eggs
(This is the original recipe but I learned along time ago, to half the spices for the 1st time - so I halved everything except for the Parmesan cheese. I also used ground oregano instead of dried, because that's what I had in the cupboard.)
Combine the cheese, oregano, garlic powder, and pepper on a plate. In a bowl beat the egg. Dip the chicken breast in the egg and then the cheese mixture. Put in pan and bake at 350 for 45 - 50 minutes, until done.
Fruit salad. I used 2 apples, 1 banana, 3 clementines, and strawberries. I sliced everything up and mixed in a container of Cool Whip - sugar free.
I also served green beans.
While the chicken was cooking, Tyler keep telling how good it smelled. Finally the moment of true arrived as we all sat down to eat. We all LOVED the entire dinner. This will definitely be put into our dinner rotation. Pretty much carb free, except for the fruit, which I figured was only about 25 -30 carbs and that would depend on how much you ate.
Try it - you'll be surprised how yummy the whole dinner will be! Enjoy!
