I was doing so well at having a daily post -- until Thursday. I don't know what happened to Thursday - Sunday but it's Monday already!!
I didn't get piano shopping like I had hoped last week. Tyler called me from school with a terrible side ache on his right side. Todd was concerned that it may be his appendix, and nurse Shalise confirmed that the appendix are on the right side so I took him in to the doctor. False alarm. By late afternoon the pain was gone and he went to basketball and football practice.
This weekend Tyler and I took apart the bench that is on our front porch and sanded it down and re-stained it. Tomorrow, Tyler doesn't have football practice so I'm going to have him help me put it back together. Saturday night I got out all of my stuff to make cards with and was going to enjoy making cards -- that is until Tyler and Kody decided that they wanted to make cards. I was very proud of myself. I kept my cool and let them use all of my stuff and make what non-matching cards they wanted too. I waited until they were done and in bed and then I did make a few cards before calling it a night. I had left all of the stuff on the table, thinking I would make some Sunday afternoon. I slept in on Sunday morning and when I did wake up, Tyler and Kody were back making cards again!! They were so proud of the cards they made. Some I will probably use, some I probably won't use!!
Today I've been trying to get my office at work organized, I seem to acquire papers out of nowhere. I have a hard time concentrating when things are cluttered and in disarray. With this task accomplished, I can feel like I'm back on top of things at work. What a great feeling!!
Sunday morning, I made Pumpkin Waffles. My visiting teacher, Sophia had this recipe on her blog so I tried it. I like pumpkin bread, cookies, pie, etc but I wasn't sure my family would like them. I "secretly" put the pumpkin in and blended it up before anyone knew it. Tyler's first words after he took a bite where "Mom, these are the best waffles ever!" Kody asked my if I put cinnamon in them and that's why they are orange. I told him I did put cinnamon in them. After everyone had 2 waffles, I finally told them that they were Pumpkin Waffles. I hope you enjoy them as much as we did.
Pumpkin Waffles
3 cups flour
2/3 cups packed brown sugar
4 tsp baking powder
2 tsp cinnamon
2 tsp salt
2 eggs
2 1/2 cups milk
1 cup canned pumpkin
4 Tbsp vegetable oil
Mix flour, baking powder, cinnamon and salt together. In a separate bowl, combine eggs, milk, pumpkin and oil. Pour wet ingredients into the flour mixture and mix gently until smooth. Do not over mix. Cook in a well-greased waffle iron.
I won't let it die!
